Chana Chaat  Rida Aftab Tarka Recipes in Urdu

Ingredients:

Boiled Chickpeas ½ kg
Boiled Potato ½ kg
Onion 2
Mint Leaves ½ bunch
For Yogurt Chutney:
Yogurt 250 grams
Green Chilies 6
Water 2 cups
Green Coriander ½ bunch
Salt ½ tsp
Mint Leaves 2 tbsp
For Making Tamarind Chutney:
Tamarind Juice 1 cup
Water 1 cup
Cumin Seeds 1 tsp
Jaggery 1 tbsp
Red Chili Powder 2 tsp
Salt ½ tsp
For Making Chaat Masala:
Round Chilies 12
Carom 1 tsp
Cumin Seeds 1 tsp
Fennel Seeds 1 tsp
Whole Coriander 1 tbsp
Black Salt ½ tsp
Tartary ½ tsp
Method:
For Yogurt Chatni:
• In a blender add 250 grams yogurt, 6 green chilies, ½ bunch green coriander, 2 tbsp mint leaves, ½ tsp salt along with 2 cups water. Blend well.
For Tamarind Chatni:
• In a saucepan add 1 cup tamarind juice, 1 tsp cumin seeds, 2 tsp red chili Powder, ½ tsp salt, 1 cup water along with 1 tbsp tartary. Cook for a while.
For making Masala on Chaat:
• In a frying pan add 12 round chilies, 1 tsp carom, 1 tsp cumin seeds, 1 tsp fennel seeds and 1 tbsp whole Coriander. Cook and sauté.
• After this add ½ tsp black salt, ½ tsp tartary. Mix well.
For Serving:
• In a plate spread ½ kg boiled chickpeas, ½ kg boiled chopped Potato. Now pour imli ki Chatni and yogurt chatni.
• In the end add 2 onions, ½ bunch mint leaves. Sprinkle ready masala on top.
• Ready to serve
