CHICKEN NOODLE SOUP
Ing :
½ kg chicken (thigh and drumstick pieces)
½ kg carrots, sliced
2 sticks of celery
1 onion, peeled and left whole
5 garlic cloves, chopped
Few Parsley sprigs
2 litres water
2 stock cubes
Salt and pepper, to taste
4 oz thin noodles, broken in small pieces and boiled
Dill, chopped to garnish
Method :
In a large pan put chicken, celery, onion, garlic, carrots and parsley
with the water. Boil, remove scum that rises on the top with a slotted
spoon . Lower the heat and add the stock cubes, salt and pepper to
taste. Simmer gently for an hour and if the liquid reduces too much, a
little more water may be added. Remove the parsley and discard. Take
the chicken out and de-bone it. Chop into small pieces and return to the
soup. Divide the noodles between 4 soups bowls, pour soup on top and
garnish with dill.
