VEGETABLE MALAI KOFTA

Ingredients:

Boiled Potatoes 4
Peas ½ cup
Carrots 1
Mint leaves (chopped) 1 bunch
Green coriander (chopped) 1 bunch
Bread slices 2
Salt to taste
Egg whites 2
Rice flour 2 tbsp
Black pepper (crushed) 1 tsp
Seekh kebab masala 2 tbsp
For Gravy:
Onions 3
Yogurt ½ cup
Ginger garlic paste 1 tbsp
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Coriander powder 2 tbsp
All spice powder 1 tsp
Oil 1 cup
Salt as required
Fresh Cream ½ cup

Method:
Boil and mash 4 potatoes with the help of a fork. Grind ½ cup chopped mint leaves, 4 chopped green chilies, salt and 2 tbsp seekh kebab masala, 2 tbsp rice flour and 2 bread slices together. Add in 1 tsp crushed black pepper and salt. Grease your hands and make small vegetable balls out of it. Dip them in egg whites and shallow fry them. Now take 1 cup oil in a pan and fry 3 onions till golden brown. Take the fried onion out in a tissue paper. Once they are crisp, crush it and mix it with ½ cup yogurt. Add 1 tbsp ginger garlic paste, 1 tsp turmeric powder and 1 tbsp red chili powder in yogurt and mix it. Add yogurt in the wok and cook it. Add in vegetable balls then add in 1 cup hot water and salt. Cook it. When it is cooked add in ½ cup fresh cream and 3 chopped green chilies. In the end add all spice powder and keep it on a low flame for 5 minutes. Garnish it with chopped green coriander and mint leaves. Serve hot
